1. Heat oil in heavy bottomed pot.

METHOD
Cook beef and onion in deep saucepan. Add bacon and cook for 5 mins. Add other ingredients and cover. Simmer until rice is cooked and meat is tender. Garnish with parsley and serve with a salad. |

Method
1 . Heat the oil in a heavy pot (iron) and fry the spring onions(scallions)
and garlic for 2 mins. over medium heat.

| 4 strips bacon
1 c. diced celery 1 c. diced onion 1 lb. lean ground beef 2 tsp. Worcester sauce 1 tsp. mustard 8oz. can tomato sauce (cut in strips) ¼ c. ketchup 1 tsp. garlic or I peg garlic 1/2 tsp. pepper |

METHOD
1 . Grate coconut and use I qt. hot water to obtain the coconut milk. 2. Place peas in saucepan with coconut milk. Add clove and garlic and cook until tender. 3. Add remainder of ingredients, simmer until rice is properly cooked. |
